Cuvée Demi-Sec, Blanc de blancs



Grapes:
100% Chardonnay

Type of soil:  
Calcareous, rich chalk with fossils of belemnites, mollusc of the secondary era.
Our wine growing culture is respecting the natural environment; followed by ‘Réseau Magister’ since 1991.

Vinification:  

Alcoholic and malolactic fermentation in thermo-regulated containers. 
Blend of 2017 assembled with reserved wines.
Bottled in April 2018; bottles conditioned on wooden shelfs.
“Remuage” (riddling) before disgorging.
Dosage: 32 g/l.

Degustation
Light golden appearance with a green reflexion.
Tasting: nose dominated by flavours of pear, with a discreet taste of brioche.
Pleasant and fresh palate.
To be tasted with a dessert or cheese.
Can be served from now on, or can be stored during 1 to 2 years.

This Champagne illustrates perfectly the great tradition of 'demi-sec' champagnes. Grandiose, creamy, based on a refined and persistent acidity which gives it a delicate freshness.
